PASSOVER BLUEBERRY MUFFINS

(Yields 12 muffins)

 Ingredients:

  • ½ cup butter
  • 1 cup sugar
  • 3 eggs
  • ¼ tsp. salt
  • ¼ cup potato starch
  • ½ cup cake meal
  • 1 cup frozen blueberries
  • 1 tbsp. cinnamon sugar

Directions:

  1. Preheat oven to 350°
  2. Cream sugar and butter
  3. Add eggs and beat
  4. Stir together, then add: salt, starch & cake meal
  5. Fold in the frozen blueberries
  6. Divide into cupcake tins lined with cupcake liners
  7. Sprinkle with the cinnamon sugar
  8. Bake for 50 minutes
